Born and raised in Auburn, Maine, Peter Theriault; otherwise known as, " The Chickenman" rose to fame in the early 90's with his famous event known as Chicken Fest. Peter started cooking his famous chicken for friends and family in at the Kent's Landing campground in Naples, Maine in 1993 using his own customized sauce. His recipe was a favorite with locals and visitors alike. The campers went crazy for his chicken and the feasts lasted into the long hours of the night. He went from cooking 1-2 chickens to 14 plus to satisfy the enormous appetites of everyone at his parties. He eventually progressed to catering for local parties such as weddings, holiday cook outs, and VFW events. (of course, by then, he put on a shirt!) People would line up and scream "Is the chicken ready yet?" Chicken Pete only uses fresh ingredients from our local farm, Blackies in Auburn, Maine. Although the original recipe has changed, the commitment for high quality ingredients has not. Look out for the Chicken Man around town and don't hesitate to give him a thumbs up when you see him. His sauce is now sold on Walmart.com, Esty, and E-Bay. More recipies to follow!

Simply mix Chicken Pete's Cock Sauce with mayonnaise to taste and you have yourself your own version of ranch dressing with a kick!
Use Cock Sauce in your next wing recipe or add the sauce to your favorite brand of hot sauce for a cocky twist!
Add some Cock Sauce to your fresh salsa for a tart, tangy, and fruity flavor.

At Chicken Pete, LLC, we believe that food should be both delicious and nutritious. That's why we use only the freshest ingredients. Our dry rub compliments the rich flavors of the cock sauce. Here's a recipe that we are sure will be a hit with your family!
1 package of 4 chicken thighs
1 teaspoon onion powder
1 Tablespoon Cayanne pepper
1 Tablespoon paprika
1/4 teaspoon cinnamon
1 Tablespoon garlic powder
1/2 teaspoon thyme
1 teaspoon dried orange peel
Salt to taste
Mix all of the dry ingredients together and use as a dry rub for the chicken thighs, making sure to get under the skin as well as over. Sear the thighs in whatever medium you like to use, (we like to use bacon fat.) Sear for only a few minutes on each side. Place in a baking dish then into a preheated oven at 350 degrees. Bake for 45 minutes or until fully cooked. You can pour the cock sauce over the chicken when done or use it for dipping. We do both!! Serve with your favorite side dishes.
